Food: Afternoon Tea with a Hint of Pink

You might remember over the summer I visited The Comfy Duck on the outskirts of Grimsby, Lincolnshire. This beautiful restaurant situated within the Oaklands Hotel offers the most delicious seasonal menus created by award winning chef Steven Bennett. The latest offering from the Comfy Duck kitchen is a very special pink-inspired afternoon tea. 

Served throughout October, 10% of the price from each tea will go to the Pink Rose Breast Cancer Unit at Grimsby Hospital. 
Just some of the treats within the afternoon tea include  ham, mustard and honey savoury scone, salmon and cream cheese bagel with rocket, a lime posset topped with a cosmo sorbet and a beautiful pink macaron.

If you’re not based in or around Lincolnshire, fear not, you can treat yourself to a little luxury at home with this delicious gluten free chocolate brownie recipe that the Comfy Duck team were kind enough to send through to me! 

Recipe

350g Dark Chocolate
175g Butter
7 free range Eggs
400g Golden Caster Sugar
175g Gluten Free Flour
50g Cocoa Powder
1tsp Xantham Gum

Method

Place the chocolate and butter into a heat proof glass bowl and gently melt together over a pan of simmering water. In a separate bowl, whisk together the eggs and sugar until pale and airy. Once the chocolate & butter has melted, cool for 5 minutes and fold into the egg mixture a third at a time. Sift together the flour, xantham gum & cocoa powder and fold into the chocolate mixture. Stir in the white chocolate drops and desired nuts and place into a lined baking tin and cook at 180º for 25-30 minutes. 

Brownies are best served gooey and slightly undercooked, so if the batter still feels loose to gently shake, leave to cool and it will set with a delicious fudgey centre. Once cool, slice and store in a cool and dry place before serving.
